Poke Bowl


Poke! I need to be honest up until last year when I went to Japan I really had never heard of it before! Funny enough though, the origin of this dish is Hawaiiani.

Poke in fact means “cut into pieces” and the name refers to the slices or cubes of raw fish that are served in a bowl. The Hawaii origin of this plate serves it on kukui nuts while the modified japanese version does it with rice ( of course) and it is served with dressing, vegetables and seasonings.

What I like the most in this plate is that if a complete dish, that, despite the small size, is very fulfilling! It is also very cute and quick to make!

Just check it up your fridge, have some salmon? veg? an Avocado? get some steamed rice build your bowl and go for it!

Doses for 2 portions


INGREDIENTS


- 160g steamed rice ( any type will do!)

- EVO oil

- vegetable oil

- flour ( 50-60 g )

- paprika powder

- 1/2 onion

- 3 floret broccoli

- 2 medium size tomato

- mayo

- spicy sauce

- 100 g of smoked salmon

- salt and pepper

PROCEDURE


a) RICE

Start by boiling or steaming your rice. For this recipe I used basmati white rice but you can use any rice of your choice. You could also use quinoa or couscous, or as traditional hawaiian style nuts ( I have never done this so if you want to follow that path you better check some recipes ! )

Steaming the rice will take approximately 10-15 minutes so once that is cooking you can focus on your other toppings.


b) CRISPY ONION

I focused on the crispy onion. This is a very typical topping you will have the ability to choose when you go to poke shops ( at least the japanese one!)

The crunchy texture and flavour of crispy onion is honestly something else! is the topping that change completely this dish from a " bowl of food" to a " bowl of magic".


Luckily you can now buy this is the sushi section of many grocery stores ( eg. In big sainsbury's) but making this is extremely simple so lets follow below:

1) chop the onions in tiny cubes as tiny as you would make to prepare an italian soffritto!

2) put them in a bowl with some all purpose flour, salt and paprika

3) prepare a pan with a couple of cm of oil ( as you would do to fry any other food)

4) once the oil start boiling put the onion. Fry until golden and crispy ( you can try one or two pieces as test. They have to become proper brown crispy!)

5) remove them from the oil and put on a plate with some kitchen roll to absorb the excessive oil


c) SPICY MAYO

This is another ingredient ( together with the crispy onion) that does make the difference to this plate!

As we are opting for a quick easy recipe, we are not making the mayo from scratch ( even though you can if you want a better result!).

Use a couple of spoons of mayo. Mix with a spoon of a spicy sauce of your choice ( I used sweet chilli thai sauce for a lighter version).

Leave in the fridge util last minute.


d) THE REST

This one is easy.

-Chop and boil some broccoli or use some frozen ones. add some salt and pepper.

-Chop some fresh tomatoes

- cut some smoked salmon or if you are going for fresh ones ( be careful with the quality and freshness of it) just cut your salmon in slices or cubes


e) MAKE UP YOUR BOWL



We are almost there!

Get a bowl ( like a cereal bowl or a soup bowl will be fine!)

Put your steam rice on the bottom.

Put all your ingredients on top ( salmon, tomatoes, broccoli or any other topping of your choice).

Put on top the crispy onion and sprinkle with you spicy mayo!

SUGGESTIONS

You can use different toppings. Most famous lately are avocado, corn, tofu, mango! Just go wild nothing can be wrong!
