Lentils curry and couscous


Doses for 3 portions


INGREDIENTS

- 160g lentils

-3 carrots

- 3 potatoes

- 1 onion

- 2 tablespoons of olive oil

-1 table spoon curry paste or curry powder

- 400 ml vegetable broth


-180g dry couscous ( as side)

-10-15 cashew nuts

PROCEDURE


Slice the onion finely and put them to golden with the oil in a pan. In the meantime slice the carrots finely and the potatoes of about 2 cm of diameter. Once the onions are goldened add the carrots to the onion and then the potatoes and keep stirring.



Add now the tablespoon of curry paste or curry powder ( I personally added a bit of both as the flavour given by the paste and the powder are slightly different. The paste is slightly acid and the powder I use is pure 100% mild curry! I like a mix of both, but you can use what you have it will be fine, just taste it as see if it need any adjustment like an extra spoon or a bit of pepper instead as per your personal tastw!)

Add now the lentils and the 400 mls of vegetable broth and put a lid on the pan.


Turn down the hob temperature to a medium low heat and cook roughly for 30 minutes.

Stir every now and then to make sure it does not burn on the bottom of the pot.


Once the curry is almost ready you will notice the broth getting much thicker as the typical curry aspects, also given by the potatoes starting melting down a bit!






for the couscous preparation:


In a bowl put the amount of couscous you need ( I used 180g for three portions).

Measure just a bit more of two times the weight in water ( 360-400 g of water) and add it to the cous cous, also add a tablespoon of salt. Stir gently until all the water has been absorbed. Then add a tablespoon of olive oil and serve it!


This is my final dish!

It was just so tasty so amazing as it filled me so much I could not even finished it even if it does not look like a huge portion! Has loads of proteins, vitamines, full of healthy veggies! It is just the right meal!




SUGGESTIONS

-I used as side for my curry couscous as it is the lightest thing I could think of! But you can use white rice, bread, naan , some pita-bread or quinoa!
