Pan Y Tomate

Doses for 4 people



INGREDIENTS


- 1 loaf ciabatta (cut into 1 1/2 inches slices)

- 2 large vine tomatoes (or beefsteak one)

- Evo Olive Oil as needed.

- Fine salt as needed.

- 2 cloves garlic cut in half (or if you prefer ground garlic)

Grater / immersion hand blender oven tray





This is typical Spanish starter/tapas but it’s also, in a similar version used in Italy called Bruschetta but it is with chopped tomatoes. This is one of my favourite dishes especially in the summer time as it is fresh, very easy and quick to prepare. It requires very few ingredients but it is so tasty, let’s try it :)


PROCEDURE

Let’s start with the tomatoes, there are two ways to do so, it depends if you have the immersion hand blender or not. We can do either way ;)



1 If you have the immersion hand blender you can chop in ¼ the tomatoes and put them in a high bowl together with some olive oil, salt and you can add some ground garlic if you like, now mix. (I've done this version!)



2 If you do not have one, do not worry! Split the tomatoes in half horizontally and use a grater, rub the cut faces of the tomatoes over the large holes of the grater and you will hand up with the skin in your hand and the flesh ready to use :) . As it is the flesh add some olive oil and the pinch of salt.

Now it’s time for the bread, as you cut it in sliced, put them on an oven tray and broil until crisp 2-3 minutes on the grill.

When the bread is ready, if you didn’t use garlic in the tomatoes, you can rub the slices with garlic.

Place your bread on a nice plate and spoon the tomato mixture over bread, drizzle with more extra-virgin olive oil. As my personal touch I put a leaf of basil on top :)

SUGGESTIONS


You can serve it with whatever you prefer, I serve my “pan y tomate” with an amazing Serrano ham and Manchego cheese as the most classic Spanish combination, may my Spanish friends excuse me.

If you would like to try more traditional way, as one of my best Spanish friend told me, you can toast the bread first and grated the half tomatoes directly on the bread and seasoning on the slice with olive oil and salt :D
