Salmon In Crust

Doses for 2 portions


INGREDIENTS


- 2 salmon fillet

- 50gr of bread

- 1 grated lemon peel

- Fine salt as needed.

- Pepper as needed.

- Various spices, as your taste ( mint, sage, thyme)

- Evo Olive Oil as needed.

PROCEDURE

As first thing we need to prepare the crust, mix together in a blender, the bread, the grated lemon, salt, pepper, olive oil and the spices you fancy. I love the mint and thyme and they taste so good in the mix.




Now get ready the fillets, you need to eliminate the skin, be careful and gentle to avoid breaking them in pieces, when you got the fillets you are ready to bread them.

Place the fillets obtained into an oven tray lined with greaseproof paper and cover them with the bread crumb you obtained before and cover them with a little bit of oil.



If you are able to, put some on the crumb under the fillets will be double crust ;)

Bake in a preheated oven at 190 º C for about 20 minutes and serve it very hot with your best choice of sides.




SUGGESTIONS

I usually use potatoes as side for the salmon I think it is one of the best match and add vegetables too, in this case I’ve done some mash potatoes and a broccoli cream, so tasty!
