Salmon my way



Salmon is the most common fish on the shelves of British supermarkets. The most of the time is coming from the Scottish coasts. It is so tasty but also healthy rich of omega three fats and protein. Because it is so common I need to always find different way to cook it so I don't get bored. Luckily it is a type of fish that can be paired with a lot of different side and combination! I prefer to cook the salmon in the oven so it is quick for me and I make less dirty pans. So this is a version I discover lately and I really enjoy it!

Let's get ready for an healthy but still tasty version of Salmon!


INGREDIENTS



- 2 salmon fillets

-1/2 onion

-1 potato

-6/8 cherry tomatoes

-black pepper

-salt as needed

-EVO oil as needed

-1/2 glass of white wine

EQUIPMENTS

-chopping board

-knife

-oven tray




PROCEDURE


Let's start with the potatoes, peel them and dice them.


Place them in a casserole with the water and cook them 10-15 minutes, counting the time from the water is boiling. In the meantime you can take care of the onion and the tomatoes, cut in half the onion and after cut into thin slices; wash the tomatoes and just cut them in pieces.



When the potatoes are ready drain them. Take an oven tray and put 2 spoons of EVO oil, add the tomatoes, the potatoes, onion, salt and mix together (you can add some spices if you like too).



At this point you can add your salmon fillets on top and adding some black pepper ( if you have the fresh one to grid is better)!



Now is time for cooking, place in oven at 220 for 20-25 minutes.

SUGGESTIONS

According to your taste you can omit the onion or replace with garlic; you can use water instead of wine. You can serve it with a Bearnaise sauce to increase the taste.
