Doses for 4 people
INGREDIENTS
- Chicken breast 400 gr
- Bread crumbed 70-80 gr
- 1 glass of milk
- Grated Parmesan 30 gr
- Fine salt as needed.
- Pepper as needed.
- Various spices, as your taste ( mint, sage, thyme)
- Evo Olive Oil as needed
EQUIPMENT
- Bowl
- Knife
- Oven tray
PROCEDURE
As first thing cut the chicken breasts, you can cut it in half to thinner them ( I usually do it as soon I come back from the groceries, so it is already done!).
Then put them in a bowl and cover them with the glass of milk. Put the bowl covered with cling film in the fridge for 15-20 minutes (the longer the better).
In the meantime you can prepare your breading. Use a plate and mix all together the breadcrumbed, Parmesan, salt, pepper and spices ( I added as my personal taste mint, sage and thyme but you can add any you fancy as turmeric tasty :P )
Now you are ready to do a little dirty mess :D Take the chicken from the fridge and pass any slice in the breading, make sure you push well with your hands the chicken in the breading to help the mix to stick on each side.
Place now the chicken obtained into an oven tray lined with greaseproof paper, pour some olive oil on each cotoletta and bake in a preheated oven at 180 º C for about 20 minutes, turning the chicken on the other side halfway through cooking (approximately after 10 min).
To add some crunchiness you can add extra 5 minutes with the grill or putting the tray at the top.
Now you are finally ready to serve your hot Italian cotolette (Italian lesson n1: one piece is "cotoletta", more than one is plural so it is cotolette!).
You can serve it with different sides as you like, I prepare a mint mayo as dip, fresh and tasty :P ( If interested I can add the quick recipe on the sauce! :))
